When you think about tropical Hawaiian fruit, you probably imagine pineapples. Mangos. And my favorite, papayas. It might surprise you, but citrus also grows really well in certain parts of the Hawaiian Islands. My aunt lives up in the hills on the Big Island, and has a small orchard behind her house. She called yesterday to tell me that her lemon, orange and grapefruit trees were creating such a bounty that she was literally struggling to give it all away. Luuuucky.
Naturally, after we hung up, I found myself with a mean citrus craving that I just couldn’t shake. And since I wasn’t able to magically grow a grapefruit tree in the middle of Portland, I walked down to my local grocer and picked up a few ripe fruits. I wasn’t exactly sure what I was going to do with them at first, but ended up winning big with these Cinnamon Grapefruit Muffins.
I love to sprinkle brown sugar over my grapefruit in the mornings. So the combination of zest cinnamon muffins topped with brown sugar-smothered grapefruit pieces might just be my new fave breakfast combo.
